Recipe: Baked Banana Oats

Oh my goodness these are NEXT LEVEL baked oats! I like to think of them as a baked-oats-banana-bread hybrid and, you guessed it, it's delicious!


I used my usual baked oats recipe but adapted it a little by adding a scoop of protein powder* to the mix and popped sixths of a banana down the middle with a sprinkle of cinnamon. Ahhh I can't tell you how yummy this is. Try it for yourself and tell me I'm wrong! Also I drizzled melted Cadbury's chocolate caramel spread across the top but it would be just as nice on its own or with a little yoghurt if you wanted to keep points and calories low.


I'm convinced this would be a great dessert, too.


Serves 1

1 SmartPoint

5 SmartPoints with chocolate drizzle


Ingredients

40 g oats

1 banana

1/2 tsp cinnamon

1 scoop protein powder (I used salted caramel flavour)

100 g fat free natural / Greek yoghurt

30ml milk

2 eggs


Toppings

15g Cadbury's chocolate caramel spread


Method

- Preheat the oven to 180ºC / Gas Mark 5

- Mix the oats, cinnamon and protein powder together in a bowl, before adding in two whisked eggs

- Then add the milk to loosen the mixture a little and the yoghurt

- Slice the banana into three and then halves

- Pour the mixture into an ovenproof dish and place banana slices in the centre of the dish (push them into the oats mixture)

- Sprinkle a little cinnamon over the top (optional)

- Bake in the warm oven for 30-35 minutes until set and golden on top

- Just before taking the oats out, fill a saucepan 1/4 full with boiling water and pop on the hob

- Put the chocolate spread into a bowl and sit on top of the saucepan to let it melt then drizzle away!


Simple, super filling and so indulgent for breakfast.


* I use PhD diet whey protein which is just 1 SmartPoint per scoop
