Recipe: Protein Pancakes – Chocolate + Banana

I love love love pancakes. (Probably why I'm needing to lose weight in the first place..but anyway!) Of course, when I started eating healthily I cut them out completely. But that's not the right mindset. Firstly, deprivation is never the answer it'll just make you feel bad. Balance is absolutely key in any diet. But my answer to finding balance with my pancake obsession is adapting the recipe. And I'm happy to share it so you can enjoy pancakes without feeling like you're going off-plan, too.
Makes 1 stack / 3 pancakes
Ingredients
1 scoop protein powder (I've been using PhD Nutrition diet whey protein which is 1sp per scoop)
1 egg - 0sp
1 banana - 0sp
Fry light spray (butter) - 0sp
Recipe
- Mash the banana with a fork, add in a whisked egg and mix
- Stir in a scoop of protein powder to make the batter. NB if it's too thick add a drop of skimmed milk
- Heat a flat pan on a medium heat with a few sprays of fry light
- Create three pancakes with around 2 tablespoons of batter per pancake
- Let them for around 5 minutes, look for little bubbles starting to come through as a sign they're ready to be flipped
- Spray the tops with fry light before flipping to avoid them sticking
- Cook for a further 5 minutes and serve!
The topping options are endless. For this stack, I really fancied chocolate with my banana pancakes. I used chocolate spread from The Skinny Food Co. that I just melted in a bowl over a saucepan of boiling water so I could drizzle it all over. Also added a crumbled biscoff biscuit, because why not!
