Recipe: Biscoff Baked Oats

I keep seeing photos of people's delicious-looking baked oats, so I thought I'd try them out for myself. Oh my, they're good. It's like having pudding for breakfast – well, this bowl was anyway! And it's so easy to make! As long as you're patient enough to wait for them to bake and not in one of those really hungry moods when you wake up.


I used a recipe from Pinch of Nom (PON) and then altered it a little to suit my topping of choice – Biscoff!


Serves 1

Ingredients

40 g oats

175 g fat free natural / Greek yoghurt

1 tsp vanilla extract

3 tsp granulated sweetener

2 eggs

20g Biscoff spread


Method

- Preheat the oven to 180ºC / Gas Mark 5

- Mix all of the ingredients together in a bowl with only 10g of the Biscoff

- Pour the mixture into an ovenproof dish and pop the other 10g of Biscoff in the centre

- Bake in the warm oven for 30-35 minutes until set and golden on top


Simple and so indulgent for breakfast. If you like it a bit thicker then just use one egg. Or switch up the Biscoff for Nutella or a healthier chocolate spread alternative to make it even lower in calories and points!


I added some raspberries to balance out the caramel sweetness in mine, which worked really well. Though next time I might add sliced banana.
