Recipe: Chicken Paprikash

ZERO HERO ALERT!!
Okay, so this has to be one of my ultimate favourite meals for several reasons.
1 - it tastes blooming delicious
2 – it is fairly quick to make
3 – hello, it's ZERO POINTS!
This is a take on a classic Hungarian paprikash. I don't want to really compare it to the real deal because that's made with all kinds of yumminess like cream, which of course this one avoids. But it is pretty darn close and it's probably the healthiest version of the dish you will find.
The recipe below can feed four people really however, this is what we make for just the two of us. What we like to do is save around half of the paprikash and blitz it into a soup the next day. Oh man, that is goooood.
Also, it's great without the chicken too, making it into a yummy veggie dinner – just swap chicken stock for veg. And if you substitute the quark for coconut milk too, it's a superb vegan dish.
Serves 4
Ingredients
For the chicken:
salt and pepper
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp paprika/smoked paprika
1/2 tsp garlic salt
fry light spray / olive oil (this will add points though!)
4 chicken breast
1 white onion
4 cloves of garlic
1/2 tsp oregano
1 tsp paprika/ smoke paprika
150g fresh baby tomatoes
2 bell peppers
1tbsp tomato puree
300ml chicken stock
100g spinach / rocket
200ml FF creme fraiche / quark
Method
- Butterfly the chicken breast and coat in the mixture of herbs and seasoning. Cook for approx 10 minutes on a frying pan coated with fry light/olive oil. Remove and keep wrapped in foil
- Chop the onion and peppers and add to the chicken's pan, frying until soft. Then add the minced garlic, oregano and paprika and mix well
- Add the tomato puree and cook for a couple of minutes before adding the baby tomatoes (whole or chopped in half)
- Next, add the stock and bring to the boil before letting it simmer for 15 minutes so all the vegetable are nice and soft
- When the dish is almost ready add a good handful or two of spinach or rocket and let it wilt
- Finally, season and mix in the creme fraiche or quark until it's warm
You could slice the chicken breast and add it to the paprikash or serve it as a whole breast alongside the stew.
The beauty of this dish is that it's great with mashed potatoes, roasted potatoes, rice and, if you want to splash some points, really good with bread!
