Recipe: Creamy Garlic Mushroom Bruschetta

A great one for breakfast, brunch and lunch or even a light dinner. It's got all those delicious components in – mushrooms with garlic and a creamy sauce. Tastes so yummy and rich without being heavy or heavy in calories and points! You can still enjoy creamy mushrooms and still be on plan – it's win-win. The key is alternatives. And for this one, I've switched cream and cheese for light cream cheese – ticking off two ingredients in one go!


Serves 1

Ingredients

fresh sourdough bread

100g mushrooms

20g spinach

30g light soft cheese

2 cloves garlic

1 bacon medallion

fry light

salt + pepper

1 tsp thyme


Method

- heat a couple of sprays of (butter / olive oil / rapeseed oil) fry light in a pan while slicing the mushrooms and bacon

- add the bacon to the pan and allow to cook until crispy

- add mushrooms to the pan with the crushed garlic cloves, seasoning and a tsp of fresh or dried thyme

- chop the spinach while you let the mushrooms brown a little before adding the chopped leaves

- when the spinach has wilted a little, mix in the soft cheese with extra pepper and mix

- pop a slice of sour dough under the grill on in the toaster before adding the mixture to the top

- serve and enjoy
