Recipe: Overnight Oats

You know what they say: "fail to prepare, prepare to fail". And it's true. Planning meals and prepping food is definitely a good way to ensure you'll stay on track. I've got in to the habit of having protein pancakes for breakfast almost everyday instead of porridge because, miraculously, they're actually fewer points! And while it's fine in theory to have pancakes every morning, my group made a good point that I'll probably get fed up of them. And instead of them feeling like an indulgence, they'll just be the norm and boring. I don't want that to happen to pancakes!


So, I made a promise to myself (in front of my virtual group for accountability) that I was going to step away from pancakes unless it's the weekend. And through the week have something different. First up on the menu is over night oats. Chosen because I knew that if I made them and they were just sitting in the fridge waiting for me in the morning, I wouldn't even have to think about what to have for breakfast – it would just be there ready. And that's exactly what happened. The great thing is I was actually excited to eat them too, because it was something different. And – while they don't take the place of pancakes in my heart – I'm loving having a new way to eat my oats that has numerous flavour possibilities depending on what fruit is in the house.

Ingredients

50g uncooked oats

6 tbsps fat free Greek yoghurt

1 banana

handful of frozen raspberries


Method

- find a glass or empty jam jar

- start layering the ingredients with 2 tablespoons of oats, followed by 2 tablespoons of yoghurt

- then layer fruit before starting the process again with the oats

- pop in the fridge overnight and enjoy in the morning!


Add a little sweetner or 0 calories syrup to the yoghurt for a 0 point way to sweeten the breakfast. Or squeeze a little honey on top of the yoghurt layer.


Yum, yum.
