Recipe: Mars Bar Inspired Baked Oats

Baked oats have become a real breakfast favourite for me recently. Maybe it's because the weather has really turned cold and this dish is just the perfect thing to warm me up. Also, I've been getting a lot of love on Instagram for my recipes, so I thought it's about time I added more!
This concoction came to me one morning when I was trying to decide what flavours I fancied and couldn't choose between chocolate and caramel – you can understand my difficulty. Until I had a light bulb moment. I became a protein powder mixologist and used half a scoop of each flavour – simple, yet genius.
Then when it came to toppings I had to follow suit and smothered the top in a teaspoon of Skinny Food Co. low-sugar salted caramel spread and sprinkled a few choc chips on top. I was actually going to slice a mars bar from the celebrations tin to pop on top but they had mysteriously vanished...partner insists he didn't eat them but that mystery is yet to be solved. Either way it worked perfectly well without them and saved me some points no doubt.

Ingredients
40 g oats
1/2 scoop chocolate protein powder
1/2 scoop salted caramel protein powder
1 banana
3 tbsp fat free natural / Greek yoghurt
30ml skimmed milk (optional)
1/2 eggs
1 tsp low-sugar salted caramel spread
Method
- Preheat the oven to 180ºC / Gas Mark 5
- Mix the oats and protein powder together in a bowl, before adding in one/two whisked eggs
- Then add the milk to loosen the mixture a little if needed and the yoghurt
- Roughly chop the banana and stir into the mixture (it doesn't affect the flavour but adds some extra goodness)
- Pour the mixture into an ovenproof dish
- Bake in the warm oven for 30-35 minutes until set and golden on top
